Hawks Hill Ranch sits high in the Adelaida District west of Paso Robles — limestone soils, cold nights, and a vineyard that earns every degree of its elevation.
The vineyard
Our blocks climb to 2,000 feet on the calcareous shale and limestone the Adelaida District is known for. Days run hot, nights drop cold off the Pacific, and the dry-farmed vines dig deep. Yields stay small; flavors concentrate. Block 1 — the high Syrah block behind Dark Pool — is the proof.
Winemaker · Don Burns
Don Burns makes the Hawks Hill wines with a light hand and a long memory: acidity stays present, alcohol stays in check, and every bottle is built for the table. The 2022 Liquidity was the first vintage blended with Don — the house style has carried his signature since.
Limit Up Lamb Farm
The ranch raises estate lamb under the Limit Up banner — pasture-raised, farm-to-table, and a fixture of our pairing menus. If a tasting note on the board says "Moroccan spiced lamb shanks," odds are the lamb walked these hills.
